Healthy Pumpkin Pie Smoothie & Perfect Pumpkin Pie

I am sharing two tried-and-true recipes that I love: a healthy pumpkin pie smoothie recipe that is vegan and dairy free, and a very unhealthy but literally perfect recipe for pumpkin pie that I have been making since 1998!

Normally, I substitute plant or nut based milks for regular or for evaporated milk, but this recipe is perfect EXACTLY AS IS!

Healthy Vegan Pumpkin Pie Smoothie

Adapted from Vegan Heaven

Ingredients

1/2 cup pumpkin puree

1 banana

1 cup almond milk (or your preferred non-dairy)

3 dates

1/2 tsp vanilla extract

1/2 tsp cinnamon (heaping)

pinch of nutmeg, pinch of ginger, pinch of ground cloves – or you can just use pumpkin pie spice

6 ice cubes

optional: 1 tbsp chia seeds to thicken (it will already be thick- this will make it extra thick and a bit more filling

Instructions

Blend until completely smooth, separate into 2 glasses and enjoy!

Makes 2 servings

Calories: 160 without chia seeds, about 210 with chia seeds

The Best Pumpkin Pie Ever

Adapted from ‘Holiday Pumpkins’ by Georgeanne Brennan

Ingredients

1 unbaked pastry shell (I use the classic Betty Crocker pie crust recipe)

1 + 3/4 cup pumpkin puree

3/4 cup sugar (raw organic if possible)

1/2 tsp salt (I use Salterie One’s West blend)

1 tsp ground cinnamon (heaping)

1/2 tsp ground ginger

2 eggs

1 cup evaporated milk

1/2 cup water

Instructions

Preheat oven to 450F.

Cook pumpkin suree on med heat in a saucepan for about 10 min, stirring contantly, until it starts to carmelize.

Add sugar, salt, cinnamon and ginger to cooked puree and then remove the pan from heat.

In a separate bowl, beat eggs, milk and water together. Add to the pumpkin puree mixture.

Line a pie pan (i usually lightly dust with flour so the crust doesn’t stick.

Pour filling into pie pan, and bake 15 minutes.

After 15 minutes, turn the temp to 300F and cook another 45 minutes until the center only has about an inch of liquid. Note: It depends on the oven. I usually bake mine for an hour at 300F and its perfect.

Cool on a wire rack for 20 min at least before serving (I usually wait at least 30 minutes).

Servings: 6

Calories per serving: I don’t want to know.
